
Black Beans Cuban Style
Ingredients
1lb of Dried Black Beans
1 Large Green Bell Pepper
3/4 Cup of Olive Oil
i Large Onion chopped finely
4 smashed garlic cloves
1/2 Teaspoon of ground black pepper
1/4 Teaspoon of dried oregano
1 Bayleaf
2 Tablespoons of sugar
2 Tablespoons of sherry
2 Tablespoons of Apple Cider Vinegar
1 Tablespoon of Carolina Bob's All Purpose seasoning (Orginal or No-Salt)
Preparation
Step 1: Place the black beans and bell pepper in a pot with 10 cups water.
Step 2: Simmer on low for about 45 minutes until beans are doubled in size.
Step 3: Chop the bell pepper and add the remaining ingredients to the
beans.
Step 4:Bring to a boil and then reduce to simmer, cooking for about
1 ½ hours until soft. If needed, add more water so you have the right
consistency. Serve with sour cream if, desired.
