
Cheesy Beef Hash
Ingredients
2 Medium Russet Potatoes or 2 Cans of Diced Potatoes
3 Tablespoons of Olive Oil
1 Teaspoon of Kosher Salt
1 Teaspoon of Ground Black Pepper
1 Small Onion; Diced
1 Red Bell Pepper; Diced
1 Clove of Garlic; Minced
1lb of Lean Ground Beef (90/10)
1 Teaspoon of Carolina Bob's All Purpose Seasoning (Original Recipe or No-Salt)
1.5 Cups of grated sharp shredded cheese
Preparation
Step 1: Peel potatoes and cut them into small cubes. Rinse of the starch and place them in a bowl of cold water. Drain and pat dry.
Step 2: As the potatoes dry, heat oil in a cast iron skillet. Add potatoes and use a spatula to cook the potatoes until they are tender and golden brown (about 15 minutes) Season with salt and pepper and set them to the side.
Step 3 : Preheat the Broiler to high.
Step 4: Add more oil to the skillet and add diced green peppers, diced onions and garlic to the skillet and cook until soft and fragrant (about 7 minutes).
Step 5: Add ground beef and a teaspoon of Carolina Bob's All Purpose Seasoning; cook until the ground beef is brown.
Step 6: Add potatoes to the cast iron skillet. Mix together and sprinkle grated sharp cheddar cheese on top of the combined mixture.
Step 7: Place the cast iron skillet in the over and broil for about 1-2 minutes.
