
Coconut Glazed Salmond
Ingredients
6oz of Salmon or Shrimp
1 tablespoon of Carolina Bob's All Purpose Seasoning (Original Recipe)
1 Teaspoon of Old Bay Seasoning
14oz coconut milk
3 tablespoons minced garlic
1 tablespoon of fresh minced ginger
1 tablespoon of fresh lemon zest
2 tablespoon of fresh lemon juice
1/4 teaspoon of Kosher salt
A few stems of fresh rosemary, thyme and sage
2 teaspoons of capers
Preparation
Step 1: Season salmon with Carolina Bob's All Purpose Seasoning and Old Bay, Sear Salmon or Shrimp in skillet with a teaspoon of coconut oil . Remove when cooked (about 4-5 minutes on each side)
Step 2: Deglaze skillet with coconut milk; add garlic, ginger, lemon zest, lemon juice and salt and bring to a boil until the sauce thickens.
Step 3: Add fresh rosemary, thyme, sage and capers and simmer for about a minute. Then remove from heat.
Step 4: Serve salmon or a shrimp on a bed a rice; spooning the sauce over the seafood.
