Ingredients
1.5 Cups of Panko Breadcrumbs
Oil Spray
1 Egg
1 Tablespoon of Mayonnaise
1.5 Tablespoons of Dijon Mustard
2 Tablespoons of Flour
2 Teaspoons of Carolina Bobs's All Purpose Seasoning
1 lb of Chicken Tenderloins 2/3 Inches thick.
Preparation
Step 1: Preheat convection oven to 390°
Step 2: Toast Panko and spread toasted Panko out on a baking pan. Spray with neutral oil.
Step 3: Bake for 3 to 5 minutes. Until light golden brown.
Step 4: Pour into a small bowl.
Step 5: Dredge Tenderloins- Combine the egg, flour, mayonnaise, mustard and Carolina Bob's Seasoning into a bowl and stir with fork until thoroughly mixed. Use tongs and transfer the dredged tenderloins into the flour fixture; covering both sides.
Step 6: Place the tenderloins in the bowl with the brown Panko coat both sides.
Step 7: Place the tenderloins on the baking rack.
Spray just a little oil on them and finish cooking the tenderloins. Try to keep them slightly separated.
Bake Tenderloins:
Bake them in the preheated oven. Bake for 15 to 20 minutes depending on how
thick your tenderloins are. Serve at once with Honey-Mustard or Ranch dipping
sauce.
